COOKING WITH
CHILLED AVOCADO SOUP
Ingredients:
2 medium-sized ripe avocado pears
1 clove of garlic, crushed
1 tbsp lemon juice
pt (285ml) soured cream
1 pt (570ml) cold chicken stock
salt and freshly-milled black pepper
Method:
Halve the pears, remove stones and
scoop out flesh, including greenest
part next to the skin as this colours
the soup. Chop flesh roughly and put
into goblet of liquidiser with the
garlic, lemon juice, half the chicken
stock and some salt and pepper.
